Chocolate Cherry Almond Bites

A few weeks ago I decided that once I finished the books I had on hold at the library, I’d start rereading my childhood favorite series, Laura Ingalls Wilder’s books. So far, I’ve finished Little House in the Big Woods and Little House on the Prairie, and now I’m in the middle of Farmer Boy.

I was a real pioneer nerd as a kid, and apparently I still am because since I started reading these books again I’ve been doing more “from scratch” things like making my own vegetable broth and baking bread. If I really think about it though, these things are not terribly out-of-the-ordinary for me anyway. I like the idea of making whatever I can with my own hands, in my own kitchen, rather than buying it already made for me, whether that’s tortillas or salad dressing or, now, vegetable broth.

As excited as I’ve been about all that, I thought I’d take a little break from the world of log cabins and homesteading and butter-churning for a moment to bring you this much more modern recipe for these delicious little chocolate cherry energy bites!

This isn’t the first time I’ve made energy bites. I love snacks, and I do like to buy granola bars sometimes (READ: when I have coupons), but often I’ll just make something like this to keep at the house to snack on. I wrote another recipe last year for Chocolate Banana Snack Bites, in case you’d like to check that one out, too.

One of the best things about energy bites (or snack bites, or whatever you call them) is that as simple as they are, they’re still really versatile. You can throw almost any flavors you want into the food processor, and as long as you can make everything hold together well, you can’t really go wrong.

This flavor is one of my favorites so far because it includes dried cherries. If you haven’t tried those before, I’ll be honest with you–they’re basically candy. Actually, I think they taste like cherry cobbler because they have such a sweet, concentrated cherry flavor. And of course, cherry and chocolate is such a perfect combination that I had to throw in some semi-sweet chocolate chips. Add some almond butter because, well, almond butter is just the best. Toss in some oats for substance and a spoonful of chia seeds for a little more nutritional value, and you’re all set!

Chocolate Cherry Almond Bites

Filled with chocolate, cherries, chia seeds, and more, these simple five-ingredient energy bites are great for snacking on when you need a sweet treat or something to hold you over until your next meal!

Ingredients

  • 3/4 cup old-fashioned oats
  • 1/4 cup dried cherries
  • 1/4 cup semi-sweet chocolate chips
  • 1/4 cup almond butter
  • 1 tbsp chia seeds
  • cinnamon for rolling (optional)

Instructions

  1. Add all ingredients to a food processor (except the cinnamon, if you choose to use it) and pulse until it all comes together to form a sticky, moldable dough.

  2. Roll into 1 to 1.5-inch balls. There should be enough dough to form about 8 balls. If you find them too sticky, you can roll them in cinnamon to coat.

  3. Place in refrigerator and chill for 30 minutes before snacking. Store in a sealed container in the refrigerator.
