5 Breakfast Ideas for Easy Mornings

It’s been a fantastic summer around here, but I’m looking forward to settling back into routine as the new school year begins. I think a big part of easing into a routine is having a solid breakfast plan. Let’s talk about adding some easy breakfast ideas to your game plan today!

Oliver and I are not in a stage of life right now that includes hectic mornings. We typically have time for me to actually cook a hot breakfast each morning, whether that’s stovetop oatmeal or scrambled eggs or avocado toast. And tea. Always tea.

But some mornings we love the convenience of breakfasts we don’t need to put much thought into. We achieve that in a couple different ways:

  1. Make-ahead breakfasts: Meal prepping is big these days. As our schedules fill up, we have to find creative ways to make better use of our time. A great way to do that is to make a “batch” of breakfasts you can eat throughout the week.
  2. Quick breakfasts: In our case, this is mostly smoothies, though I’d typically consider scrambled eggs or fried eggs to fit into this category as well. We find that things like cereal and granola bars just don’t have as much staying power as we’d like. If I have a bowl of cereal for breakfast at 7 a.m., I’m typically reaching for a snack by 9:00. A smoothie (especially if I have it with a hard boiled egg or some other form of protein) tends to keep me full quite a bit longer.

I used to make something along these lines all the time in college so I could grab one or two in the morning before heading to class. It only takes about ten minutes to get the ingredients ready to pop in the oven, and the muffins will stay tasty for a few days. Make a double batch if you’re feeding a lot of hungry bellies!

These are similar to the banana muffins, but you’ll get just a little bit of veggie power added into the mix! I’ve always loved zucchini bread, and these muffins are a great little spin off of that idea.

If savory breakfasts are more your style, this breakfast casserole is just for you. It’s based on the classic New Orleans muffaletta sandwich, and it’s another great option for baking ahead of time and eating throughout the week. If you really want to focus on the grab & go quality, try baking this in a muffin tin so you won’t even have to get out a knife in the morning. Note: You might want to reduce the cooking time by a bit if you do it this way.
