8 Easy Summer Potluck Recipes

Hey there, friends! I’d like to interrupt your regularly scheduled programming (i.e. the weekly recipe I post every Thursday) to share this special post with you! I’m doing a quick little roundup for you of some of my favorite summertime dishes from The Savvy Plate. Food is often the focal point of gatherings for Memorial Day, Fourth of July, and family reunions, so whether you’re grilling out and looking for some side dishes or you’re on the hunt for something to bring to a potluck, here’s a list of eight easy summer recipes to check out!

Side Dishes

Asparagus Pasta Salad

I created this recipe in the spring, and I brought it for Easter lunch with Oliver’s family. Asparagus is more of a spring vegetable, but you may still be able to find some fresh asparagus in your area. If not, green beans could be an easy replacement for a summer version of this recipe!

Quinoa & Lentil Salad

We love this recipe around here because it feels so light and fresh, yet it’s quite wholesome and it can keep you satisfied for a while! Even if you don’t need this quinoa salad for a potluck or gathering, it’s a great recipe to use if you’re into meal-prepping or planning ahead for the week because it keeps well in the fridge.

Summer Veggie Tortellini Salad

Here’s a little throwback to one of my very first recipes on the blog! Pasta salad is always a great idea for potlucks and summer parties, but I feel like the use of tortellini makes this one extra special. It’s a great use for fresh summer veggies like corn and bell peppers, and tortellini cooks so quickly that this recipe is sooooo easy to throw together.

Simple Pineapple Salsa

I’m crazy about chips and salsa, y’all. I really am. Back in college, my roommates and I were absolutely obsessed with Blue Coast Burrito (When we got back in town at the beginning of our senior year, they told us they’d missed us during the summer. We were regulars, for sure.), especially their pineapple salsa! If I make a batch of this at home, it rarely lasts longer than one night.

Strawberry Kiwi Salsa

Here’s another salsa recipe because I told you I love salsa. (Seriously, you can read more about that in the blog post for this recipe.) This recipe might just be the easiest recipe in this post, only requiring three ingredients! You might want to prepare a double batch so you’ll have plenty to share.

Jell-O Foam Salad

This one is a twist on the “foam” my great-grandmother used to make all the time, and it’s one of my favorites. I created a lactose-free version of her classic recipe, and I think it’s every bit as delicious! The great thing about this recipe is that you can customize it with any flavor of Jell-O you like!

Peach & Cherry Crisp

This crisp uses some of my favorite summer stone fruits (although you can use frozen fruit to make a delicious and easy version of it anytime of year!) and I think it would be phenomenal with vanilla ice cream on top. This summer recipe is as simple as tossing some fruit in sugar & spices, whipping up a crumbly topping in the food processor, and baking!

Drinks

Sparkling Blueberry Lemonade

I’m only including one drink recipe in this post, but I think this one is absolutely worth a shot! Lemonade is one of my favorite cold refreshers, and the addition of blueberry simple syrup and a little fizz makes this one delightful for a summer gathering.
