In the pancakes vs. waffles debate, I will always choose French toast.
And yes, that is allowed. I’m choosing to ring in 2019 with a little obstinance and a side of French toast… which is vastly superior to pancakes & waffles, in my book. (P.S. If you have to know what I’d pick between the actual choices of pancakes & waffles, find out here.)
I’m not going to act like I’ve reinvented French toast with this recipe because I haven’t. French toast doesn’t need to be reinvented. That being said, this is my own preferred way to make French toast. I’ll even make it on a random Monday morning once in a while, just for fun.
To keep things interesting and a little more filling, I use a whole wheat bread rather than white bread. My personal favorite bread to use is the “Oat So Healthy” honey oat bread from Aldi. (I’m not being paid to tell you that–I just want you to have access to great French toast.)
I don’t add sugar to the… dunking mixture?… You know–the part with the eggs and milk that makes it French toast rather than plain bread on a frying pan? Yeah, I don’t add sugar to that. Sometimes it burns, and I don’t think the toast needs it anyway if you’re still planning to drown it in maple syrup. Ya feel?
I do add a good amount of vanilla extract and cinnamon though. And salt. Don’t skip the salt.
Just two more notes for cooking the Honey Oat French Toast:
- I choose to cook mine in butter. I’m sensitive to dairy, so I do use almond milk rather than cow’s milk, but I allow a little dairy because I think cooking it in salted butter is the way to go. If you can’t do dairy at all, go for coconut oil instead.
- Cast. Iron. Skillet. If you have one, drag it out for this recipe. It helps the French toast brown really well, and I think most foods taste twice as good when cooked in cast iron. A lid can also be very useful.

Honey Oat French Toast
- 1 tbsp salted butter
- 3 eggs
- 1/4 cup almond milk
- 2 tsp vanilla extract
- 1 tsp cinnamon
- a generous pinch of kosher salt (Just under 1/8 tsp, if you need to be exact.)
- 4 to 6 slices honey oat bread or whole wheat bread
- maple syrup & fruit (for topping)
Melt the butter in a cast iron skillet on medium heat.
Whisk together all other ingredients except the bread. (Because why would you whisk bread?)
Soak two bread slices in the egg mixture for 5 to 10 seconds per side, letting the bread absorb some of the liquid.
Add the soaked slices of bread (in a single layer) to the cast iron skillet and cook for 2 minutes on the first side. Flip, cover the skillet with a lid, and cook another 2 minutes. (Covering with a lid helps you trap some steam in order to fully cook the inside of the toast while you brown the outside.)
Repeat the process with the rest of the bread. Depending on how dry and absorbent your bread is, you should get 4 to 6 slices out of this recipe.
Top with maple syrup & fruit as desired, and serve immediately.
