Peach & Cherry Crisp

Anyone else out there just NOT a huge fan of Valentine’s Day? I mean, I’m all for love and chocolate and flowers, but can we skip some of this other stuff? As soon as Christmas is over, I don’t love going to the store because the unavoidable pink-and-red-and-hearts-everywhere aisles are just overwhelming and cheesy to me. I’m sort of a Valentine’s Day Scrooge. Sorry, y’all.

But you know what I can get behind? Dessert. And I know Valentine’s Day is the perfect opportunity to eat plenty of that!

This simple peach & cherry crisp uses frozen fruit and pantry staples for an easy dessert that you can throw together quickly.

Oliver knows pretty well by now that my love language is food. (Well, technically my love language is quality time, but I particularly like quality time around the table. With food in front of me.) He knows that I enjoy showing love to him by cooking things he loves to eat. He has a pretty serious sweet tooth, and while peanut butter & chocolate is always a winning combination with him, he’s also a big fan of cherry cobbler.

I happen to love fruity desserts too, so this Peach & Cherry Crisp was the perfect treat for us. (And of course I had to sneak some oats in there because I just can’t get enough. I’m not sure why I didn’t just write a Valentine’s Day post entitled “Love Letter to Oats.”)

So, whether you’re a Valentine’s Day Scrooge like me OR you can’t understand why I didn’t dump heart-shaped sprinkles all over this dessert, I hope you’ll make the most of this little holiday and find some creative ways to show people you love them. Know your people, and know what makes them feel loved. I’ll be over here cooking good food for my husband and watching a movie on the couch with him, but if you know someone who would just love to receive that giant, pink teddy bear you saw at Walgreens, go for it.

Peach & Cherry Crisp

This warm crisp uses frozen fruit, so you can enjoy stone fruits like cherries and peaches even in the winter!

Ingredients

for the filling

  • 10 ounces frozen peaches
  • 10 ounces frozen cherries
  • 2 tbsp sugar
  • 1 tbsp cornstarch
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

for the topping

  • 1/4 cup walnuts
  • 1/4 cup oats
  • 1/4 cup whole wheat flour
  • 1/4 cup coconut oil (or butter)
  • 2 tbsp sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 375 degrees. For the filling, combine cornstarch, sugar, cinnamon, ginger, and salt in a bowl and toss to coat the frozen peaches and cherries.

  2. In a food processor, pulse all topping ingredients until a moist and crumbly mixture forms.

  3. Grease a glass pie plate and evenly fill it with the fruit filling mixture. Crumble the topping evenly over the fruit. Bake for 35-45 minutes, and serve hot.
