Add all ingredients to a food processor (except the cinnamon, if you choose to use it) and pulse until it all comes together to form a sticky, moldable dough.
Roll into 1 to 1.5-inch balls. There should be enough dough to form about 8 balls. If you find them too sticky, you can roll them in cinnamon to coat.
Place in refrigerator and chill for 30 minutes before snacking. Store in a sealed container in the refrigerator.
