Cilantro Lime Chicken Soup

It’s the middle of sniffle season, so it seems like an appropriate time for this fun & fresh twist on what might be the ultimate sick day comfort food—chicken soup. Keep reading for my Cilantro Lime Chicken Soup recipe!

Last year around this time, the day after returning from Disney World, I ended up in bed for several days with the flu. (Mickey Mouse, if you’re reading this, I forgive you.)

While I had the flu, I spent my (very few) waking hours thinking about LIQUIDS, i.e. water, hot tea, and chicken soup. I placed a grocery order with Kroger for Oliver to pick up and then had him throw the ingredients for a basic chicken soup into the crockpot. (If you know me at all, you know this is a very hands-off approach to dinner for me—proof that the flu is no joke!)

When you’re sick, chicken soup just seems like the thing to do.

In this version of chicken soup, I’m adding in cilantro and lime for bright flavor and a vibrant green color to cheer you up and make you feel like you’re doing something extra healthy for yourself.

And this part is completely optional, but I like to use a homemade chicken broth rather than store-bought. Feel free to Google “bone broth” and let the internet tell you about all the benefits, but I personally love how cheap it is to make.

If you want to try making your own broth for the first time, here’s a recipe for my vegetable broth. To make chicken broth, you’ll also need to save up some chicken bones to add to the mix. If you’re roasting a whole chicken, save the carcass (Does anyone actually like that word?), and put it to good use for a batch of broth.

Whip up a batch of this soup when you’re feeling great & save a few jars of it in the freezer for a rainy day (or a sick day)!

Cilantro Lime Chicken Soup

Perfect for a sick day, a rainy day, or any day of the year, this bright spin on classic chicken soup perks up the flavor with fresh cilantro and lime!

Ingredients

  • 1 tbsp coconut oil
  • 1/2 a yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1/2 tbsp grated ginger
  • 1 cup diced carrots
  • 5 cups chicken broth (plus salt to taste if your broth is low sodium or unsalted)
  • 1.5 lbs chicken breast (cut into 1/2-inch chunks)
  • 1 bunch cilantro
  • 2 tbsp lime juice

Instructions

  1. Add coconut oil and onion to a pot over medium heat. Cook until onions are soft, about 5 minutes.

  2. Add garlic and ginger. Cook one minute.

  3. Add carrots, chicken broth, and optional salt. Bring to boil.

  4. Add diced chicken. Boil for 5 minutes, then lower the heat and simmer for 15 to 20 minutes. (Carrots should be fork tender.)

  5. Remove 1 cup of the broth. Blend with the cilantro completely. Add back to pot, along with lime juice. Serve.
