Pineapple Pizza Buns
Today we’re going to take a break from my typical veggie-heavy, mostly-good-for-you recipes and have PIZZA instead. Deal?
I had this idea a few weeks ago when I spotted the jar of pineapple leftover from my Pineapple Upside-Down Loaf Cake. I thought, What if I made cinnamon rolls, but if instead of cinnamon and sugar I just used pizza??
Of course, I couldn’t simply call the recipe Pizza Rolls, because that name happens to be taken already by the classic snack designed to burn the roof of your mouth after school or at sleepovers. And while those Pizza Rolls are good in their own right (sort of), they’re not what we’re shooting for here. And so I settled on calling them Pineapple Pizza Buns.
I must tell you, my biggest regret with this recipe is that I didn’t come up with it in time to deliver it as a Super Bowl party food. To make up for my mistake, I’ll provide you with a brief list of other occasions for which Pineapple Pizza Buns would be appropriate:
- Birthday parties
- May the 4th (A tiny nod to Princess Leia’s buns. May the Fourth be with you.)
- Star Wars movie premiere celebrations
- Literally anything involving Star Wars or not involving Star Wars
- The circus is in town.
- The circus is not in town.
- Friday pizza nights
- Sad Mondays
- Et cetera, et cetera, et cetera
As you can see, there are very few occasions upon which pizza cannot be justified. (Excluding a handful of diets, but if that’s the case for you, I hope you’re not troubling yourself with this recipe. No cauliflower pizza crust here.)
I’ll provide instructions for pizza dough in the recipe for you, but if you’re short on time or willingness, store-bought pizza dough will do nicely.
Oh, and if you’re in the camp that believes pineapple and pizza are not soul mates, you and I will likely not be splitting a pizza, but feel free to substitute your own favorite pizza toppings.

Pineapple Pizza Buns
Cheesy pineapple pizza in fun roll-up form.
for the pizza dough (or sub store-bought dough)
- 1 cup warm water
- 1 tbsp white sugar
- 2 1/4 tsp active dry yeast (1 packet)
- 1 1/2 tbsp kosher salt
- 3 cups all purpose flour
for the filling
- 1 tsp olive oil
- 1/2 cup your favorite pizza sauce
- 1 1/2 cups shredded mozzarella
- 3 tbsp grated parmesan (plus more for topping)
- 1/2 cup pineapple tidbits
Stir sugar and yeast into warm water. Let sit for 10 minutes. Yeast should be foamy.
Mix in salt and flour, starting with 2 1/2 cups of flour and adding more if it's still too sticky to work with. Knead for about 3 minutes until dough is smooth. Grease a bowl with olive oil and place the dough inside. Cover with a kitchen towel and let rise in a warm place for two hours.
Stretch the dough into a rectangle (approximately 10 x 13 inches). Brush with the olive oil, then spread with pizza sauce and top with cheese and pineapple. Roll it up, starting from one 10-inch end and moving to the other. (In other words, your completed roll will be 10 inches long rather than 13 inches.) Pinch the edge against the roll to seal.
Cut the roll into 8 equal slices. Grease a pie dish or similar baking dish, and nestle the pizza buns inside. Cover loosely with plastic wrap and let rest in a warm place for 30 minutes. Preheat the oven to 350.
Remove the plastic wrap, and bake for 25 to 30 minutes. Sprinkle with extra parmesan cheese before serving if desired.
